Raspberry Lemonade
Refreshing and made with just a handful of ingredients, this homemade Raspberry Lemonade is perfect on a hot summer day. It is so easy to make and looks gorgeous due to its vibrant colour. Made with organic honey, fresh raspberries and lemon juice, this sweet lemonade is not only delicious, but also packed with vitamins and antioxidants. We have added just a moderate amount of high quality honey to sweeten the drink, but you could adjust the sweetness to your taste. This drink is a great option for kids or outdoor summer parties.
INGREDIENTS
1 cup fresh raspberries
1 lemon, juice
4 cups water
3 tbsps honey (we used Late Harvest)
yield: 5 servings
INSTRUCTIONS
Wash raspberries.
In a blender or a food processor, blend raspberries with lemon juice, honey and ½ cup of water.
Strain the raspberry mix through a piece of gauze or a sieve to remove any pulp and seeds.
Pour into a large pitcher. Add remaining water, some lemon wedges and ice. Stir together.
Serve over ice.
TIP: Make ahead beautiful raspberry ice cubes.
Place several berries into each mold of an ice cube tray and cover them with some water. Freeze until they are solid, then remove the cubes from the tray and serve with the raspberry lemonade.
